These cottage cheese pancakes packed with protein have become my go to when I’m craving a sweet-ish breakfast but want to feel less guilty about it. I also topped them off with strawberries and raisins and some chocolate syrup. Trust me, you can’t even tell these are cottage cheese pancakes and not your regular pancakes. They only use 5 basic ingredients and come together in less than 30 minutes.

Ingredients required for mini cottage cheese pancakes
- 1/2 cup cottage cheese
- 1/4 cup all purpose flour
- 2 eggs
- 3 tbsp maple syrup (can be substituted with honey)
- a pinch of salt
- 1 tbsp butter
Direction to make the pancakes
Heat up a flat pan and grease with butter, just enough to coat the base of the pan
Whisk all the ingredients together and make a batter. At this point, it’s okay if there are cottage cheese lumps in the batter. It won’t matter when the pancakes are cooked.
Fill a piping bag with the batter to make mini pancakes. If you’re making them regular sized then feel free to directly add a dollop of the batter to the pan.
Pipe out mini circle on the pan as shown below:
Cook each side for 3-5 minutes, until golden brown.
Take the cooked pancakes out in a bowl and top with your favorite toppings. Strawberries, bananas and chocolate syrup are my favorite. You can also drizzle maple syrup.
Little tip to pack the mini cottage cheese pancakes with even more nutrients is by adding chia seeds in the batter.
