No bake strawberry pistachio tiramisu

Here is a twist to standard tiramisu with strawberries and pistachio and it tastes absolutely delicious! Now strawberries and pistachio are a match made in heaven, only second to strawberries and Nutella! This dessert comes together pretty quick, is a great crowdpleaser and can be prepared ahead of time to impress your guests or just enjoy on your own. Every bite is a burst of textures and flavors from the berry lemonade dipped biscuits, rich creamy filling and strawberries. Without any further ado, let’s jump into how to make this strawberry and pistachio tiramisu.

Ingredients

Main ingredients to make the strawberry and pistachio tiramisu
  • 1 packet lady finger biscuits
  • couple of strawberries
  • 1/4 cup ground pistachios
  • 1 cup heavy cream
  • 1 mascarpone
  • berry lemonade
  • strawberry jam
  • 1/4 cup date sugar (or sugar of choice)

Directions

Preparations for the tiramisu :

  1. Cut a few strawberries into slices and arrange them around the edge of your dish(es).
  2. Add the leftover ends of the strawberries along with some strawberry jam to a small pan and heat it with 2 tbsp berry lemonade. Stir until the consistency has changed into a thick sauce.
  3. Prep the filling by mixing together the heavy cream, mascarpone and sugar until smooth, creamy and light. Be careful not to overheat. It should take about 3-4 minutes with an electric hand mixer at medium speed.
  4. In a food processor, grind the pistachios into a fine powder.
Slice the strawberries to line your serving dish

Layering the tiramisu :

Spread the strawberry sauce onto the dish.

Dip the biscuits in berry lemonade and place in the dish adjacent to each other.

Layer the biscuits on top of the strawberry sauce

Layer with the filling. You can either add dollops and smoothen it out with a spoon or use a piping bag to pipe out the filling.

Pipe the filling for best results. I’ve made a makeshift piping bag from zip lock bags here. That’s my go-to and works perfectly well.

Sprinkle the ground pistachio on top of the filling. Repeat the layers if desired.

Chill in the refrigerator for 2 hours to overnight for best results. The tiramisu can be covered with plastic wrap and stored in the refrigerator for uptown 5 days, although it tastes best fresh.
