Chia seeds also referred to as a “superfood” is the main ingredient in chia pudding as the name suggests. These tiny seeds are packed with nutrition and health benefits and are so versatile in terms of how to consume them. My favorite way is by making a pudding out of them. It’s the perfect hassle free breakfast that can be prepared a night or two before to avoid having to think about what to eat for breakfast on busy workdays. How do chia seeds become a pudding?
It’s magic!!
Nah, just kidding, Chia seeds have the capacity to absorb water and fluff up leaving the liquid (milk in this case) in a pudding / custard like mixture. It’s as simple as that.

You will need the following for the basic pudding base irrespective of additional flavors:
ingredients :
- 1/4 cup chia seeds
- 1/2 cup yoghurt
- 1/2 cup milk of choice
- 1-2 tsp honey
I have seen adding half yoghurt and half milk making the pudding thicker and creamier. You can use any milk really, almond milk, oat milk. Coconut milk will also enrich its flavor further so that’s a good option.
Directions :
- Add all the ingredients together in a bowl and mix well until the seeds are submerged in the liquid.
- Refrigerate overnight
The pudding can be assembled and stored for 3-5 days. Be wary if you’re adding fresh fruits to it, some might not stay fresh for that long.
1. Classic chia pudding
Let’s start with the basics. A simple and easy one with your favorite fruits. Feel free to layer it with granola or your cereal of choice. It’s a blank slate really, you can get as creative as you like with this recipe.
In this pudding, I added butterfly pea flower powder for the beautiful blue color and tried to make an ombre effect.
2. Chocolate chia pudding
Chocolate is almost as versatile an ingredient as chia seeds themselves! Can anything go wrong with chocolate! Okay, now that I’ve had that thought, maybe I wouldn’t put chocolate on pizza. Nevertheless, it totally goes in this pudding.
To make this version of the pudding, you will need to add 2 tbsp coco powder to your milk and yoghurt mix. I added some crumbled leftover brownies in between the layers for some added flavor and topped the pudding off with chocolate chips.
3. Matcha chia pudding
For all the matcha lovers out there, this recipe is a blast! I absolutely love matcha lattes and matcha crepe cakes so thought of incorporating it in this recipe.
Make a matcha mix by adding 1 tsp matcha powder to 1 tbsp hot water. Whisk well so mix. To the basic pudding mix, add the matcha mix. Stir well and assemble with your favorite fruits. I’d recommend using strawberries because matcha and strawberries sure are a heavenly combination!
4. Tiramisu chia pudding
Dessert or breakfast?
Now here’s a fancy one that satiates your morning coffee need and breakfast in one go.
Dip a lady finger biscuit or two in coffee and press it in the bottom of your jar. Top it with chia pudding, layer with more coffee dipped biscuits and dust cocoa powder on the top. This combination goes really well with raspberries if you want to add some fruits.
5. Rose chia pudding
Every south Asian kid must’ve heard of the rose drink ‘Roohafza’. A rose flavored concentrate used in summer drinks, rice puddings, etc. It has a lovely flavor and goes really well with chia seeds.
To the basic mix described above, add 2 tbsp Roohafza to make this delicious version. I also added some raspberries to introduce a bit of tartness in the pudding.
