With its creamy custard base infused with the cozy, spiced flavors of eggnog, and the satisfying crunch of caramelized sugar on top, this dessert is the ultimate way to celebrate the season. One of the things I absolutely love about this Eggnog Crème Brûlée is how it captures all the warming spices that make holiday flavors so special. The rich, velvety custard is infused with a perfect blend of star anise, cinnamon, cardamom, and nutmeg—each adding its own unique depth and warmth. Ingredients

- 5-6 egg yolks
- 1 cup whole milk
- 1 cup half and half/ heavy cream
- 1 tsp each: nutmeg powder, cardamom powder, vanilla extract, rum extract
- 1 stock of cinnamon and 1 star anise
- 1/3 cup sugar
- 6 tsp sugar for later
Equipment needed
- Whisk
- Oven
- Blow torch
Directions

- Separate 5-6 egg yolks from the whites in a mixing bowl
- Add 1/3 cup sugar and whisk well
- In a heavy bottom pan, heat up the milk and cream with all the spices and extracts until it comes to a boil. Allow the milk to completely cool down
- Mix the milk in small batches with the egg and sugar mixture, whisk well
- Strain the mixture to remove lumps and whole spices
- Divide the mixture into ramekins
- Place the ramekins in a tray, half filled with water
- Put the tray in a pre-heated oven and bake at 350F or 180C for 30 mins. Cooking time will depend on the depth and size of the ramekins.
- Allow the ramekins to cool down partially before individually wrapping the, in Saran Wrap before placing the fridge.
- Refrigerate for 6-24 hours.
- Before serving, add a 1sp of granulated sugar on the custard surface. Torch until brown.
- Decorate as wanted and serve immediately.
