Tartines are basically deconstructed open faced sandwiches with infinite options for toppings on a slice of bread of choice. They can be sweet or savory or as in this case, both. New York Times called them ‘Sandwiches dressed in Couture‘ and for good reason. They are fun to create, a blank canvas to paint with flavors of your choice and make a great breakfast! Well, I could eat them for lunch and dinner as well. In this post, I have shared the recipe for grilled peach tartines. It comes out so flavorful with the caramelized peaches, a layer of garlic and herb Boursin and drizzled with chili honey.

Ingredients
What is chili honey?
I call it liquid gold, honey! It’s my favorite way to spice up something sweet and give a kick to a dish. Simply sprinkle some chili flakes and mix into your honey. It makes such a great topping, especially for these tartines. The kick from the peppers balance the sweetness of the honey for me because personally, I’m more of a savory person than being a sweet-tooth.
Directions
- Cut the peach in 8 even slices and grill each side for about 3-4 minutes until you see a char on it. keep aside.
- Heat up the olive oil in a frying pan and toast the slice of bread. I used sourdough here but you can use your bread of choice. Toast each side for about 3-4 minutes so that it’s crispy and golden.
- Spread a generous amount of Boursin on the face up side of the bread.
- Wash the arugula and dab with paper towels and add them to the bread.
- Time to add the grilled peaches over the arugula.
- Roughly chop the fresh basil and put it on the bread.
- Make the chili honey by adding chili flakes to honey and mixing. Drizzle the honey in the end as a finishing touch.
