What is pumpkin spice?
Pumpkin spice is a mix of a bunch of ground spices like cinnamon, ginger, nutmeg, allspice and cloves. It can be used to flavor baked goods from muffins, pies bread, cookies to beverages and even savory dishes. I stumbled upon this spice mix only after moving to the US and have adapted my palette to the taste over the years. It’s incredible how people incorporate pumpkin in their dishes during harvest season here because growing up, we only had pumpkin-potato curry which absolutely sucked and ruined my notion of pumpkin for most of my life.

How to make pumpkin spice pancakes

First of all, you will need the following ingredients

- Make the pancake batter as instructed on your store bought mix packet. Usually you’d mix water or occasionally, milk and eggs. I have learnt over time that a runny pancake batter makes fluffy pancakes that a thicker one.
- To the batter, add the pumpkin puree and pumpkin spice and mix well. Make sure there are no lumps.
- Heat up a flat bottom pan and brush some butter
- Add a ladle full of pancake batter and cook for 2-3 minutes on each sides or until golden brown
- Whip up some fresh cream and pour on top of the pancake stack. You can also add berries of choice and maple syrup.
