Mini loaves not only look cute but come in the perfect serving size. They’re great to make as baking gifts to friends and coworkers and can be made in all flavors imaginable. Being a pistachio lover, I wanted to bake something with them and thought why not create this mini loaf recipe. To add an extra layer of flavor I’ve topped the loaves with rose cream made with Roohafza. Now pistachios and rose and heavenly pair!
For those who are not familiar, Roohafza is a rose flavored South Asian drink and is synonymous with summers. Whenever you have guests over, serving Roohafza is a must. Okay, maybe not that mandatory but everyone loves it! And it can be added in so many dishes, especially desserts to give them a rose flavor. Here is a recipe to Roohazfa flavored chia pudding.

Ingredients
To make the loaves :
Dry ingredients
- 1 cup all purpose flour
- 1/4 cup ground pistachio
- 1/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cardamom
Wet ingredients
- zest of 1 lemon
- 2 eggs room temperature
- 8 tbsp butter temperature
- 1/2 cup yoghurt
For the rose cream :
- 1/4 cup heavy cream
- 1/4 cup cashews soaked in water
- 1 tbsp maple syrup
- 1 tbsp Roohafza
Directions to make the mini loaves
To make the mini loaves :
Before starting anything, pre-heat your oven to 350F or 180C.
Mix the dry ingredients in a bowl and the wet ingredients in a separate bowl. Combine the two and mix well.
Fill your loaf liners unto 3/4th the volume.
Bake at 350F or 180C for 30 minutes until the tops are slightly golden brown and a toothpick when stuck in, comes out squeaky clean.
To make the rose cream
In a blender, blend all the ingredient except the heavy cream together.
In a separate bowl whip the heavy cream until stiff peaks are formed. Incorporate the other ingredients into the cream.
Let the loaves cool down completely before proceeding to the next step.
Using a piping bag, pipe out the design you want or simply spread the cream over the loaves.
The cream should be smooth and silky and easily spreadable. Be careful not to eat it all before spreading it on the loaves because yes, it is that good!!! The cashews give the cream an amazing texture! If making the loaves vegan, leave out the cream.
And there you go! Every bite is so flavorful and indulgent. Garnish with some chopped pistachios and rose petals and enjoy!
