My new favorite salad dressing : Avocado dressing (Creamiest ever)

Up your salad game by trying this rich and creamy avocado dressing. It’s made with simple, easily available ingredients. It is refreshing from the lemon and basil with the right amount of creaminess. Apart from using it in salads, it can also be used as a dip for chips/pita or a spread on toast. So without further ado, let’s get right to it.

Ingredients to make the avocado dressing

The texture of this dressing is so smooth
1 avocado
1-2 cloves of garlic
1/4 cup basil / cilantro or both
juice of 1 lemon
1/4 cup yoghurt
4 tbsp olive oil
Salt and pepper to taste

Directions

Cut the avocado and remove the outer skin. I’ve found the best way to do this is to cut the avocado in quarters and pull them apart. Stick your knife into the seed and it comes out easily that way. Then just peel the skin, chop the avocado into small pieces and add into the blender.

Peel some fresh garlic cloves and add them into the blender as well.

I used basil fresh from my herb garden. You also use cilantro or both for added freshness.

For the yoghurt, I used greek yoghurt to get a thick texture.

Blend all the ingredients mentioned above together. You can change the proportions as per taste. To make the consistency desirable, you can add water or more yoghurt.

Enjoy on your favorite salad or as a side with chips!

The dressing can be stored in an airtight jar for 7-10 days in the refrigerator. Although, it tastes best when served fresh.
