I was craving brownies and I was craving this rum and raisin chocolate I used to love as a kid so I thought of putting the two together and created the yummiest, fudgiest (that’s probably not a word but we’ll go with it) rum and raisin brownies. I soaked the raisins in Old Monk which is a classic Indian rum for 2 hours. Additionally I added coffee to enhance the flavor of the chocolate. I really like coffee and chocolate together. Some chopped almonds also made their way into these brownies.
The secret to these awesome brownies is that I used a ready made brownie mixed and totally up-cycled it so it saved me a lot of time and mess in the kitchen. Here’s a link to the brownie mix that I used.

Ingredients required for the rum and raisin brownies
Directions to make the brownies
1. Mix all the ingredients mentioned above together.
2. Pour into a baking sheet lined brownie pan. Make sure to spray the sheet down with cooking spray or grease it with butter.
3. Bake for 30 mins at 350F or 180C. Insert a toothpick to check if the brownies are done. They should not come out completely clean for a fudgey center whereas if you want a cake-y centre, let it go 5-7 mins longer and the toothpick should come out clean.
4. Let it cool completely before cutting otherwise the brownie will crumble. Cooling down with allow the brownies to set well before cutting into them. I’ve found using a buttered knife helps make clean cuts.
