Ingredients required for the lettuce wraps

2 tbsp olive oil
1 tsp sesame oil
16 oz ground beef/ ground plant based meat
2-3 chilis
1 tsp cumin and paprika
1 tsp each of freshly chopped ginger and garlic
3 sprigs of scallions
4 tsp fish sauce
1 tsp brown sugar
lettuce leaves washed and dried
juice of half a lemon
salt and pepper to taste

Ingredients for the dipping sauce

1 tsp sesame oil
1-2 tbsp light soy sauce
chopped coriander
1 chopped chili
1/2 tsp brown sugar
1 tsp peanut butter (optional)
1 tsp fish sauce

How to prepare the meat

Since ground beef is usually made from cheaper cuts, we have to work it up a bit. This can be done by crisping up the ground beef and seasoning well.

First season the meat with salt and pepper.

Then, add it to a pan containing heated olive oil

Fry for about 7-8 minutes until the pieces become crispy. If any water is released, drain and keep aside.

Next, add the cumin and paprika for some extra seasoning and fry the spices for a few seconds.

Keep the meat aside.

To the same pan, add sesame oil.

Throw in the ginger, garlic, chilis and whites of the scallions. Fry for a few seconds until the raw smell has disappeared and add the brown sugar. Once the ginger and garlic start to release their aroma, you’ll know it’s ready.

Then, add the beef and mix well.

Sprinkle the fish sauce and coat the beef well

Next, add a splash of lemon juice for some freshness and acidity.

In go the remaining greens of the scallions just before turning off the heat. This will provide a nice crunch.
