How to make a comforting winter stew

Winter is upon us and it’s the perfect season for comforting soups and stews. This heart warming stew recipe is one that I make every year. It’s filled with the goodness of protein and vegetables, flavored with some unique spices and makes for a lovely dinner. The base is simple vegetables and broth but that’s the secret, it’s simple and soulful. Slowly cooked over several hours until the meat is tender and melts in the mouth.

Ingredients required for the winter stew

1 lb protein of choice cut in cubes (I used beef, stew meat cut)
2 tbsp butter
2 tbsp olive oil
2 shallots
1 white onion
3-4 celery stems
3-4 carrots
2 golden potatoes cut in quarters
1/8 cup sweet peas
1 tbsp garlic paste
1/2 cup sweet peas
2 tbsp tomato paste
3 cups broth of choice
2 tbsp all purpose flour
2 tsp cumin powder
2 tsp paprika
5-6 sprigs of thyme
2 bay leaves
1/2 cup red wine (optional)
2 tsp soy sauce (optional)
chopped coriander for garnish

Directions to make the stew

Heat up the butter in your Dutch oven and sear the meat. Add the cumin, salt and pepper, paprika and coat well. Keep aside.

In the same pan, make your mirepoix : add some olive oil and sauté the shallots, celery and carrots. Add the tomato paste and a dash of soy sauce for extra umami if you want. Keep aside.

Next, deglaze the pan with the wine. Let the spirit evaporate and reduce it. Then add the broth and all the components you just made plus the potatoes and sweet peas.

Add the herbs : bay leaves and thyme.

Cover and cook for as long as you have time for. I cooked this for about 2.5 hours.
