You might say I’m posting a lot of cucumber content lately but they are just so refreshing and perfect for summers. These cucumber sandwiches are easy to make, taste delicious and are perfect for picnic food. They are simply seasoned with salt and pepper and have a generous amount of cream cheese and mayonnaise making them moist enough and adding more flavor!

One can’t argue enough about the benefits of eating cucumbers right! They are low in calories, are mostly water and are good for hydration, contain a bunch of micronutrients and antioxidants. They taste great in salads and one of my favorite ways to eat them are in Asian salads. I had it at a restaurant once, have no idea about the ingredients but fell in love with them. They were spicy and sweet and great to snack on.

Anyway, let’s not get distracted and focus on today’s recipe : cucumber sandwiches!

Ingredients for cucumber sandwiches

One with the sandwiches all wrapped up
  • 2 cucumbers
  • 1/4 cup spinach (optional)
  • mayonnaise
  • cream cheese
  • salt
  • black pepper

Directions to make the sandwiches

  1. Wash, peel and cut the cucumbers in coins
  2. Spread mayonnaise on one side of the sandwich and cream cheese on the other
  3. Stuff the sandwich up with the fillings and assemble them
  4. Cut in half or fours and enjoy
